Peeling the shell off eggs...wtf

This is really starting to piss me off. I boil 30 eggs every sunday to last me the week. lately i wake up and take 6 out of the refridgerator to eat for breakfast and when i go to peel them the frickin shell peels off into little flakes, I mean it takes me like 2 minutes to peel each egg. this never really happened before.

any suggestions on why they are doing this?:(
 
peel them under the water - it should be easier. If you prefer, you can even do it with boiling water, it should be even easier.
seriously - it underwater works.

An old resturant trick is to tap the egg slightly with a knife, or some such other similar instument before boiling. This allows a this film of water to surround the egg between shell, thus making the task of pelling ever so much easier. Try it I think you'll be pleased with the results.

hey thanks BD, but does anybody think its because maybe i cook them to long or don't cook them long enough, I boil them for 18-20 minutes, how long do u boil yours for?:rolleyes:

This allows a this film of water to surround the egg between shell, thus making the task of pelling ever so much easier. Try it I think you'll be pleased with the results.

hey mort that sounds like a good idea cause i noticed that when an egg is cracked while boiling it peels real easy...

eggs

It takes less than ten minutes to boil an egg, but since you boil so many at once it may take a little longer to get them all done. I boil as I eat, about 4-5 at a time because I think they taste better when hot.

As far as peeling, I run cold tap water over the eggs right after boiling for a minute or so, then by the time I sit down to eat them they peel nicely.
 
How Mom taught me...

These works, it's no trick.
COOK the egg, DO NOT BOIL it!!!

1) Put the eggs in the pan,
2) fill with water just above the egg line,
3) put in a Tbsp or 2 of vinegar,
4) bring to a low boil, not rolling, just slight, little bubbles
5) COOK for 13 minutes,
6) voila, your eggs are completely cooked AND they did not heat so quickly and expand against the shell!
7) cool them with cold water,
8) hold the egg in your palm-facing the counter/cutting board,
9) gently smash the egg against the counter and roll fwd and back,
10) EASILY and QUICKLY PEEL with no problem.

Not sure what the hell the vinegar does, but this always works for easy peeling. I usually have a complete-intact shell when I peel.

I've read a few times that the fresher the egg, the harder to peel. As the egg ages, the air cell that forms between the shell membranes helps to separate the shell from the egg - the moisture content decreases and the skin pulls slightly away from the egg, making it easier to peel when it's hard boiled.
Also, i've heard that if you peirce the big end before boiling, that works too - never tried it though.:confused:
 
thanks for all the ideas cause im going insane trying to peel all these eggs, I will try all of them and let u guys know what works the best !

and if there is any other ideas out there lets here them:)
 
do you think vinegar might work cause it weakens the shell? I've never tried that, but I'm going to

I usually roll mine gently on the counter (between paper towels), until the egshell makes little cracks everywhere but the membrane isn't broken. You can usually peel just part of it and the whole thing will come off easily
 
Making a very small hole in the larger end of the egg shell will help suction in small amounts of water and separate the membranes, which will help with the peeling process. As a rule of thumb, fresher eggs are always harder to peel though because the air cell will be smaller and the pH is lowered. Eggs are harder to peel unless the pH is fairly basic...~8.9 or higher. After the eggs are cooked, crack them open on the counter and peel from the LARGER end always. Peeling under running water will make things even easier.

make sure you boil the eggs long enough (15-20min) and then cool them under cold water and peel them right away. When you put them in the fridge it makes it almost impossible to peal.
 
Well as much as I hate to admit it I have lived on a farm before.. can you tell I hate farms! One problem is if the egg is less then 1 week old. For some reason after about a week peeling them is alot easier. Don't ask me why I just know because my grandpa told me so when I was bitching about the same thing and it proved to be true.

Thanks bro! I tapped the egg on the side of the pot just till i heard a litle crack, then boiled it for 13 minutes.
well it worked like a charm the shell comes off in 2 big peices!!! u made my mornings so much easier.
