A lot of flavor in raw marinated foods, it is never 100% free of anything even when you cook it with heat. As long as you buy from reputable store, don't use ground beef(use ground sirloin) it is fine. I like my raw beef mixed with raw egg yolk and topped with capers and onions on rye bread, eat it all the time and never sick. Make sure all food is cold, chill the bowl your gonna use in freezer before mixing, and put back in fridge right away. Make sure it is 40 degrees f or below when you eat it. The fish is better with the citrus juices, the fish needs to be completely covered with juice(a little jalapeno helps too)
