I made this last night and it was incredible!!
You can adjust the amounts of everything to suit your tastes...
2 chicken breasts
1/2 onion, chopped
1/2 red pepper chopped
olive oil
1/4 cup chili sauce
1/4 natural peanut butter
cayenne pepper
1/2 cup water
1 tablespoon crushed salted peanuts
**i used just under 1/4 cup of both the chili sauce & peanut butter
Season the chicken with salt & pepper. Heat olive oil in a skillet and brown chicken on both sides. Lower heat and cook until chicken is done...remove from pan. I added a bit more olive oil and sauteed the onions and red pepper until tender. Add the chili sauce and peanut butter and stir in water gradually until peanut butter melts. You want the sauce to have a thicker consistency, so watch how much water you add...you don't want it too soupy. Add in cayenne pepper to taste, I added about a teaspoon. Stir in chicken and sprinkle with the chopped peanuts. If the sauce gets too watery, just bring to a boil, reduce heat, then simmer until you reach the desired consistency.
