I used to hate cottage cheese but it is becoming a staple and I have actualy started to like it.
Weight training you have listed sounds solid expcept SLDeads and Deads shouldn't be done so close together you could rotate them with another exercise like lying leg curl for legs and rows for back.
Your progress so far is great keep tweaking the diet as you go once you hit a platue change it up.
