Diet/workout regiment

I need advice on my diet/excercize routine. I know it is far from perfect, which is why I come here to ask for help.

In the morning I usually eat fried potatoes and eggs, or grits and eggs, or eggs and toast... along with a piece of fruit, of a bowl of watermelon/cantaloupe/honeydew and skim milk.For lunch I have a decent salad with sunflower seeds, garbanzo beans, lettuce and crutons, sometimes dressing. Dinner I usually eat some potatoes (fried, baked or otherwise), some veggies, more skim milk. Then before I fall asleep I usually have a cup or 2 of dry cereal.

I know I don't eat as well as I should, so meals are what is on the cafeteria roster.Nor do I eat as often as I should, but I really can't help this as I go to a boarding school, . I drink plenty of water..a gallon+ a day..hm..what else... Walk about a mile a day going to and fro around campus. After my last class around 3:00 I have a hour of cardio and then a hour in the gym, alternating what I work on, as to not over stress muscles, with 1 rest day a week.

I weight about 195pounds 6'4. I'm looking to cut fat, and add muscle mass and strenth for track season in the spring. I'm looking to do this naturally. Any input is welcome.

If you don't have access to cleaner/healthier foods, and are able to eat 6/7 times per day, I'd probably wait to attack any serious fitness endeavor.

The old phrase "you are what you eat" has never been more true.
