It takes energy to digest food, as someone said. That's part of the reason Ultima Replenisher (a sports HYDRATION drink) doesn't have any simple sugars. The digestion can knock 7-9 off of your maximum heart rate and limit you.
Hance, in a race, you should eat and digest carbs before, then deplete yourself on the way and don't 're-carb' until after. During hte race limit yourself you hydration, which is water + electrolites.
