I need a healthy alternative to birthday cake.

My SO's birthday is on Friday. He's been really good on his diet and I don't want to set him up for failure. :D

Anyone have ideas on a "healthy" cake? It doesn't have to be granola or anything, but I'd like low sugar and low fat, if possible.

Wow, you're a gem, a thoughtfull gesture!!

Perhaps some chocolate whey brownies with deit (artifical sweetener) icing?
 
he specifically asked me NOT to get/bake him a cake, because he doesn't want to cheat.

I found a recipe for carrot cake (which he loves) with no fat and I can substitute Splenda.
 
it really tastes like cheesecake!

You will need:

* A small box of sugar free/ fat free Cheesecake jello pudding mix

* 8 oz. of LIGHT Vanilla soy milk. You can use regular milk,,but Light soy milk is very low in carbs.

* 1/2 cup of cottage cheese. I use fat free, but which ever one you want to use will be fine.

*Splenda (optional) about 2 tablespoon's.

Follow the directions on the pudding box. Let the pudding stay in the fridge for atleast an hour. *** If you use so milk it will not be as thick as if you used regular milk.

Take your Cottage cheese and 1 cup of pudding mixture, blend it up and add splenda. There ya go! Low in sugar, carbs and fat!

You can also subsitute the cheesecake flavored pudding with any sugar free, fat free pudding brand. I tried butterscotch flavor and it was very good.
 
Love carrot cake myself. Here's a couple more that are really good if you ever need a fat-free cake.

Fat-Free Chocolate Mocha Cake

1 1/2 cups flour
1 cup sugar (Splenda Equivalent)
1/2 cup cocoa powder
1 1/4 teaspoons baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cup brewed coffee, cooled
1/2 cup skim milk or soy milk
1/3 cup corn syrup
Optional Can of Lite Cherries on top for a "Black Forest" Cake

1. Sift first 6 ingredients together in a large bowl.
2. In a small bowl, whisk remaining ingredients together to blend well.
3. Add liquids to dry ingredients, whisking until smooth.
4. Bake at 350 F for 35-40 minutes.


Fat-Free Pumpkin Cake

12 egg whites
1 cup flour (cake flour is best)
1 1/4 cups sugar (Splenda equivalent)
1-2 teaspoon ground cinnamon
1/2-1 teaspoon ground nutmeg
1 1/2 teaspoons cream of tartar
1 teaspoon vanilla
1/2 teaspoon salt
1/2 cup canned pumpkin
confectioners' sugar

1. The egg whites need to stand about 30 minutes at room temperature before using.

2. Preheat oven to 350° and set oven rack to lowest position.

3. Meanwhile, sift the flour, 1 cup sugar, cinnamon and nutmeg together twice; set aside.

4. In a large mixing bowl, beat egg whites, cream of tartar, vanilla and salt on medium speed until soft peaks form. Gradually beat in the remaining sugar, about 1 tablespoon at a time, on HIGH speed until stiff glossy peaks form and the sugar is dissolved.

5. Gradually fold in flour mixture, about 1/2 cup at a time. Now fold in the pumpkin.

6. Gently spoon into an ungreased 10" tube pan. Cut through batter with a knife to remove air pockets.

7. Bake at 350°F for 40-45 minutes or until lightly browned and entire top appears dry. Immediately invert pan; cool completely, about 1 hour.

8. Run a knife around sides and center tube of pan. Remove to a serving plate. Sprinkle top of cake with confectioners sugar.

alex2678 - the pumkin cake recipe looks REALLY good, too. He'd porbably love that one, and I like the recipe better than the carrot one I found. I'll give it a try tomorrow morning and let you know how it goes.

Your in the same boat as me with the cheesecake then,I love it and the wifey hates it so I rarely ever get to eat any =(.Red meat is random too since she dosent like,the things we have to give up for our better halves
