Crab...what a waste of time, almost all of it hard ,and it looked like a roach. I ate this clam from a reputable Chinese food takeout in like Forest Hills, Queens, NY when visiting there in 1999. Then after watching the film Castaway, learned that squeezing the sucker is how you're supposed to eat most of it. lol
