For the past 3 years I've my bodybuilding career, I've always counted carbs like this...

Lets say for example 1 slice of ezekial bread has 15g carbs and 3g fiber. So I always counted that as 12g CARBS. I always thought since the fiber isnt digested, we do not count that.

Should that slice of bread count as 15g carbs when using ratios for the day and set numbers? For example on off-days I do 200g carbs and workout days I do 275.

I would count 3 slices of bread as 36g carbs vs. 45g carbs (if I counted the fiber)

Which should I do? I know it probally wouldn't make a HUGE difference in most cases, but I'm particularly anal about counting stuff.
 
In terms of counting calories, no, fiber doesn't factor into the total (fiber itself has no caloric content).

As you said though, it won't make much difference in the numbers anyway.
