what's everyone eat along side their chicken or beef?

ok, i've only been eating "clean" for 5 full days and if i do say so myself, i already feel better...energetic, im always in a good mood, etc...I dunno if this is just because im actually feeling the motivation/dedication to lose weight, or if its the change in eating habits, but either way who cares...

Anyway, back to the point...Im just looking for suggestions on what to eat with my chicken...My job keeps me outside all day, so its hard to have real meals...

So i came up with the ingenious idea to cook 2lbs or so of meat on sunday, and seperate into individual servings in plastic containers (6oz servings) so i can take them with me for the week...But, i dont want to just eat chicken breast alone for lunch...whats some good ideas for "portable" foods to have with chicken.

I am also going to do this with beef next week...And I'm going to alternate each week so I dont really get sick of the meat...sound like a good idea?

Mr. Mail Carrier, you are not alone! I too do all my cooking on one day. But I make enough food to portion out into 36 meals for 6 days. About 14 lbs of chicken, LoL.

I portion them out into "rubber made takealongs." They are 5 for under $3, and i get the 2 compartment version. These are cheap, and simple to replace, if I lose one no big deal.

My calorie intake may be different than yours but here are some ideas.

Steamed baby carrots
Brown rice boiled in low sodium chicken stock
Steamed frozen mixed veggies
Cuban style Black beans (minus pork)
Spinach salad wit flax seed oil and balsamic vinegar dressing
low fat or fat free yogurt
2 slices of whole wheat bread
whole wheat pasta with a home made sugar free marinara sauce(fargin tasty)

Another idea for your chicken - boil your chicken, shread up in a food processor, mix with a little diced eggwhite, fat free mayo or reduced fat mircle whip, add in some sweet pickle relish for a tasty low cal chicken salad sandwich. Add a few leaves of romaine lettuce, or spinach. For a little tang Spread some mustard on the bread.

Also look into low sodium marinades for your chicken.

It takes me all of 90 seconds to pound down one of my portioned meals, and guzzle down a .5 liter of water. If the USPS is busting your chops go to a doctor and get them to put something in writing, or tell them you have developed hypoglycemia and have to eat every 2 hours.

I had the same problem with My company, I had to take a 120 second break in the middle of a delivery.

HaH, nah they leave me alone...After 9:30 I'm out on the road by myself...It's just that as the holidays come...more mail = more work = longer work day = that much less time to spend eating..But I can make it work.

Yea, I guess i miscalculated my poundage for the meat...Figure 6oz servings 2 meals a day that's 7lbs of meat...

I'm getting better at this meal plan thing...It's trial ad error I guess...But my thinking, is that this way will probably be the best...That is, so I can just get up, throw everything in the cooler for the day, and go. It all comes with time I guess, But I'll figure it out soon.

I do this with chicken and brocolli, and lean beefs. I actually don't go by week either. I just cook it all, and that way I'm not eating chicken 6 times a day for 5 days. But I figured up my caloric intake yesterday, and I'm only getting about 1000 calories, so I guess I am going to have to double my serving size.
 
Use spices when cooking. This stops you eating the same bland 'meat' meal every time. Grab some italian herbs, black pepper, moroccan spice mixes etc. This also stops the need for manufactured sauces such as ketchup/mustard etc.
 
I'm the frozen veggie queen. I have green beans, cauliflower, broccoli, okra, broccoli normandy, brussels sprouts, spinach, turnip greens, asparagus, mixed veggies.... I have a steamer that does two levels at once, so I empty one bag in the bottom, one in the top and let it steam for 15 minutes or so. Then I can portion out what I need.

I only make mine a day or so in advance.... how many days will prepared beef and chicken keep in the refrigerator?
 
good info above ^^^^ .... I like broccoli or carrotts, and brown rice or sweet potato (sometimes splends tastes good on em) ... gets a little bland, but what can you do - Good luck

I can't answer your question exactly. But what I can tell you is that saturday or sunday I used to make all my food for the entire week. By midweek it sucked.

What I have started doing in the last couple of weeks is making all my vegies on the saturday or sunday, but then only fixing 2 days worth of chicken or beef.
I marinade all my beef or chicken in a low sodium/fat/calorie marinade for at least a day, and then grill it. I used to broil it, but it tastes like ass, so I only grill my food now.

After I do my vegies I seperate them all into those little Glad disposible containers (5 for $3.50 at Publix) and I seperate my portion of vegies for the week into each one and throw them into the fridge. And then every two days, as I cook my chicken or beef, I just cut it up and throw it into the container. These make cooking easy, because just like all of you, I'm busy. I'm in grad school, so I'm usually at the house studying. So I set my alarm to go off every two hours, throw the container in the microwave for 45sec. Throw it down my throat and I'm back to doing what I need to do.

Anyway, just thought my regimen might give you some ideas for something you may want to try or work into your own regimen.

You can make brown rice/yams/veggies the night before.

I put salsa on my chicken breast. You can get different kinds (so you don't get bored)
