But to follow through on this a little, getting quality chicken legs and thighs is good stuff. The fear of saturated fat is largely unfounded. As long as you consume that (legs and thighs) by themselves or with healthy unprocessed carbs in moderation, you are good to go.
The other thing I want to point out is that eating meats with little or no fat is a very recent human phenomenon. The reason that saturated fats in meat - not in excess of course - aren't harmful has many biological reasons, but one pretty simple explanation: they come made like that from God or nature or whatever you want to believe. They are together for a reason.
This can also be applied to any type of carb that you have to process in order to eat it. Grains, rice, oats, etc. All have to be milled in order to eat it. Those carbs need to be limited in your diet.
Ideally of course we are talking about a chicken or cow that eats only food in wild and doesn't get hormones or antibiotics from humans, etc. But my point still remains. This also applies with separating yolks from eggs. Yeah you get protein from the whites, but most of the nutrients and good fat are in the yolk.
With all that we know today, somehow we still think that we can do better than the way mother nature intended. Multivitamins, protein shakes, low fat meat, instant oatmeal, etc.
It's not true in many cases as we are starting to find out. I will agree that protein shakes are better than milk, but then again humans really aren't designed to drink the milk that was intended for baby cows.
With all that being said, I'm going for a bucket of KFC with mashed potatoes and gravy.
