With regard to carbs post workout -- I've never really done this before, I don't think it has affected my progress ever. I still eat every 2-3 hrs, though sometimes this gets pushed to 4 hrs if I'm in the gym + cardio. I do make sure that I eat after and I don't include fats after. I think somewhere TheShadow also posted that the whole post-workout carb thing hasn't been shown to make that much of a difference in women.

I don't think it was specified if male or female in the question.

But I would also think that as liftforlife said, you have to experiment with it for the particular person.
