Can steel cut oats go rancid?

I have a canister of the John McCann's Steel Cut Irish oats which are beginning to smell quite funky - but not in an obviously spoiled way....
can oats go rancid like nuts and oils? Or do I have a freak canister?

sadly, yes.

Do you live in high humidity area? the added moisture will make beer out of your McCanns with the airborn yeast if you're not careful.

Oh, btw, here's a tip with Steelcut oats, in case you didnt already know: toast them. Dump the whole container into a glass caserole and toast them at 350f, mixing/stirring them every few minutes until they get deep golden brown. Let them cool and then back into the can.

You will FREAK at how wonderful this makes them taste, and the added benefit is that it cuts the cooking time in half or more.

No kidding about the toasting, eh? I'm totally gonna try that.

So I went to the store and picked up some new oats from the bulk bin and they are completely smell and off flavor - free. Which, of course, makes me shiver when I think about how long I was eating rancid oats.

cooking them does. for sure. so yes, toasting will make the carbs more bio available than not, but no more so than cooking them fully. Unless you are primed to chomp down some completely uncooked steel cut oats (read: 'I like to chew on gravel.') then you are going to cook them either way, right?

Be aware that adding any proteins or fats to the process will lower the GI of any carb... the joint of joints with Steel cut oats is cook them UNDER by a lot, stir in some Protein of your choice and a mixture of both chopped walnuts and sliverered raw almonds. Possibly the perfect meal from every standpoint.

Just be proactive with counter like fitday.com and hit your targets. Dont over stress the GI of a great carb source like oats... stress your fruit consumption and milk sugars more and you will spend your mental efforts more effectively....
