You can actually find some decent crackers at health food stores.
Many organic companies make versions of things like Ritz, Goldfish, Wheat Thins, etc., with only 3-4 ingredients (most commonly: unbleached stoneground whole wheat flour, salt, and some sort of leavening agent), no trans-fats, and no hard-to-spell additives. Granted, they don't taste quite as good, and are still loaded with carbs, but if that's not a concern for you, then there are options if you shop around and read labels carefully. These products tend to be a little on the expensive side, though.
There's also Wasa and Ryvita (which only contain whole grain rye flour and salt), but they are rather bland and dry on their own.
I recently found some graham crackers made of whole wheat flour, honey, unsulphured molasses, expeller pressed safflower oil, leavening, salt, and oil of lemon. They were a pretty good treat with some natural PB on them.
