Protein Pancake question

Hey,

I'm on the PB diet as you all know (great thing!)
However, at night, I 'treat' myself with a meal that
is almost similar in nutritional value to the ALPB meal.

I mix one scoop (23g protein 114cals, 2g carbs) of a banana
flavored whey protein with one teaspoon of cinnamon and 1
splenda along with 3-4 egg whites. I shake it in my shaker
and pour it into my non-stick pan. Turn it one time, get it
out and spread about one spoon of ALPB on it. Comes DELICIOUS
I may also put some chocolate diet icecream(only 30 cals).

The only problem I have is that it comes out 'Beefy', I mean
more an omlete texture like. I am looking for a way of making
it much more 'AIRY' without any carbs. Any ideas?
Maybe adding a Baking Soda? (But I don't want the huge
amounts of Sodium that comes with it)

instead of blending the egg whites, whip the living crap out of them in a large bowl with a wisk until they form stiff peaks. then fold them into your protein powder - your pancakes should turn out as light as air.

i don't know if this is true, but i've read that heating up whey protein might damage the protein and make it less nutritious.
 
Thanks been already trying the Egg Whites with blender. It does make even just one egg white produce a lot of volume egg white bubbles, but it does not work so well. As soon as I 'fold' it in the protein shake (which is done with powder and egg white) and put it into the pan. All the air is gone leaving it as usual.
I don't live in the U.S. But when I asked for Xantham Gum in
two stores down here, they thought I was from another planet.
 
try blending it and adding a bit more water - doesn't always work but helps me a bit w/ the same pancake.
