its about... Real business SERIOUS dieting time for me...

NO on a whim eating.. find something quick cause I didn't have time to prepare..

Cutting out alot of processed foods and gonna go straight for the fresh greens... etc.

But this will involve alot of pre-prep work.

I'm talking on a sunday whiping up a ahuge batch of Brown and Wild rice.. Chicken Breast... Grilled Asparagus, Steamed Broccoli and green beans. Grilled Fish.. etc

What kinda of time frame are the basics good for...? What is the best way to keep them? Don't want to prepare too much in advance and have things go sour on me... but I also need to prepare my diet for as many days as possible.

Rice - cook it and ziplock bag it and throw it in the freezer.
Veggies - blanche them and ziplock bag the - yep, throw in freezer.

When I'm really good (I should probably go there now :rolleyes: ) I'll cook chicken boobs every 2/3 days and leave them in the fridge.

Fish - it takes minutes to cook so it's good for when you're at home and you can pull it out of the freezer to cook if you need to.

So.. how do you keep the boobs from drying out.

Fish.. I normally eat at supper... Talipa fillets so that I think I can manage.

I'm more trying to get away from too much cottage cheese.. too much yogurt.. to much processed Lykes bagged microwave chicken.
 
My ex husband took an Infection & Immunology couse at UofDel. and his teacher gave him a lot of informative info.

Cooked food will last 7-10 days if properly refrigerated at the proper temperature then properly reheated thoroughly... The operative word = proper! LOL

Get a refrigerator thermometer & sit it or hang it on/from a shelf -- nake sure your fridge is at the right temp -- around 38 degrees F. That way, everything should keep. I've found chicken to last a good 7-10 days, eggs for months -- as for fish -- I would say 7 days or less.....
 
it's all in how you cook them to begin with. If you brown your boobs a little and then pour some chicken stock over them and cover (this is called poaching), they should be nice and juicy. Just don't cook them too long. Cook low and slow.
 
As for lettuce -- rinse it & dry it -- keep it just a teensy-tiny bit damp & roll up in paper towels. Put said rolls in a Ziploc bag & the lettuce will keep for about 2 weeks or so....

Well, try poaching them in water and chicken broth - don't over cook them.

I'll do that then shred the chicken up to put over spinach salad
If you want to reheat the chicken, put it in tupperware with a drizzle of chicken broth and nuke.
