Best endurance diet?

Without knowing your height, weight or %bodyfat I would hazard a guess that you are certainly not eating enough food. Your diet is less than what I cut on, and I'm not burning nearly as many calories as you would be with hours of training/racing. You have made your body very efficient at rationing what little food it gets. Basically what Wilson6 said is true. You may have to decide whether running marathons is more important or looking lean.

That is why "catch all" books like that can be deceiving - it is hard to write ONE way of training to fit everyone in the market.

okay, based on everyone's advice, I'm upping my protein with shakes (I realized I was eating cheese at almost every meal for protein), and I'm trying to eat every 2 hours, and I'm adding more carb rich sport drink to my routine.

we'll see how that goes.
