Problems getting torso cut

I can't figure it out, I eat 6 small meals a day each containing at least 35 grams of protein, and a non-complex carb veggie. I space them out every 2 1/2 to 3 hours. Three of the six are
Met-rx shakes. I never eat complex carbs and rarely I'll have a sweet. I train hard 5 days a week 1 hour of free weights and 30 minutes of cardio. My legs, and arms are as tight as can be, but from my waist to my neck I'm not as tight. What can I do to change this.
 
35 g of protein. what sources? are you adding up fats into this mix? lean cuts, eggs etc. have some complex carbs. you need them to keep up the intensity that you are working out at.

I drink 3 Met-rx a day and eat 3-4 8oz servings of chicken or lean red meat, don't do any complex carbs...should I be..I still get intensity it seems without them.....I try to get 30-40 grams of fat per day by way of peanut butter or other good fatty sources....Now what
