Perfecting my diet, please help me distribute my carbs etc.

hey all, im wanting to put together my diet correctly, including counting calories. Food i want to include are:
fruit: banannas, pears, oranges
proteins: tuna, thicken, little steak, protein shakes
veggies: broccoli
carbs: pb & toast, home made granola, w/rolled oats, almonds, 7 grain, wheat germ sunflower seeds, and nutritional yeast. (can i use splenda as sweetener and count it as mostly zero sugars?

When should i be eating my granola's veggies, carbs fruits etc? befor eworkout, after etc. also im 6' 190lbs, i will probably need to pay someone to fine tune everything which i dont mind doing, but about how many calories should i expect to need each day to cut down while maintaining muscle. Also what can i expect to pay for a someone to help me with this?
