What is your current height & weight? The diet spread looks you are covering all the essentials. Can't speak to the amounts relative to a macronutrient breakdown or calories that would correspond to your height & weight. Without that, I would ask, how do you feel when you eat on that schedule given your activity? Tired? Exhausted? Decent training sessions? Do you get enough sleep & do you sleep well? Just curious - what is the purpose of the upperbody workout on Sat if you are starting back on Monday doing more upper body? Also not sure if you need all that cardio.

What is your body fat %? Are you wanting your abs to show for a specific occasion, for example a contest, or is it that you want them to show and stay showing? If it is the latter then with all due respect I think you are going to have your work cut out. Some lucky people are genetically blessed with a lean midsection and visible abs but the majority don't and would find it a nightmare to maintain low enough body fat for their abs to be like a 6 pack year round.
