If you don't own and operate a wok you're really missing out.

Tonights dinner....

1 pound of thinly sliced sirloin tip seasoned with salt and pepper

3-4 cups of veggies. Here I use onions, peppers, mushrooms, asian squash, shredded carrots, and broccoli. Steam the broccoli and prep all the veggies before hand.

Hot and Spicy sauce - 3/4 cup chicken broth, 1tbsp soy sauce, 1tbsp rice wine, 1tbsp rice vinegar, 1tbsp sirachi sauce, tsp salt, tsp sugar, tsp sesame oil. Bring this mixture to a simmer and add 1tbsp cornstarch and wisk until mixed and thick.

Heat the wok with a tbsp of peanut oil/sesame oil and cook the beef in batches. Cook the beef medium rare.

Take the beef out. Wipe the wok dry, add a drop more oil, add the veggies and stir fry them for a few minutes. Here's where I put the lid on the wok and let the veggies steam for a few minutes.

When the veggies are almost done add the meat and the sauce then stir fry the whole mix for a few minutes. Let it cool the dig in.
