When bulking, all i do is increase the amount/volume of the foods i eat while in a cutting phase, eating clean is still an integral part. I want to be healthy year round. Say i aimed for 3000 cals a day on a cutting diet, i'll aim for 5000, keeping the amount of fibrous carbs the same with each meal, but doubling meat and starchy carb.
For my Protein/Fat meal before bed, I'll add 6 eggs to whatever else i'm eating, usually a salmon fillet, and sauteed mushroom and spinach.
