The red sauce that I simmered the meatballs in cooked down too much, so the next day I just added a couple of cans of San Marzano tomatoes and simmered that for a bit, and it seems to have fixed everything. All mixed together, there's an interesting mix of "simmered for hours" and "zesty fresh tomato".
