me too, I just put a stewing beef with some spices (paprika, garlic powder, onion powder, peppercorns, bay leaves) , carrots, onions and potatoes in the crockpot to cook on low overnight- that'll do me for a few days...oh, and I tossed in a can of low sodium roasted red pepper and tomato soup cause I didn't have any canned tomatoes.
I think it'll turn out kind of like goulash, but not as rich.
