once you get your protein and carbs of your diet in check, you will have all dietary support needed for your muscles, otherwise instead of getting bigger you will get leaner.
IMO there are lots of exercises that target quads or calves specifically... if you want them to grow stick to the basic movements, ie, squats, leg press, lunges, leg curls and stading calve raises, donkey calve raises....
For you it is important that train your legs once per week to allow proper recovery (you aid that with your food and rest).
