Pre-Workout Almond and Coconut Protein Balls

These lower carb protein balls are a great alternative to pre-workout protein bars and are especially useful as an “on-the-go” snack. They require minimal time and effort to make and you can make a bunch to store in the fridge or freezer (I like to keep them in the fridge and then put them in the freezer for about 15 minutes before I eat them!)

Ingredients:

2 Scoops Vanilla Protein (I like Elite Whey Best)
3 Tbsp Unsweetened Almond Milk
2 Tbsp Flaxseed Meal
2 Tbsp Almond Butter
3 Tbsp Unsweetened Shredded Coconut
1/2 Serving Almonds
2 Packets of Sweetener (I use PureVia)



Directions:

1. Place almond butter in a bowl and soften in microwave. (I keep my almond butter in the fridge and putting it in the microwave for about 25 seconds did the trick)

2. Crush up almonds

3. In a bowl, combine protein, sweetener, flaxseed meal, crushed almonds, softened almond butter, and almond milk.

4. Mix thoroughly and set mixture in fridge for about 15 minutes so it’s not as sticky or messy to work with

5. After 15 minutes, remove mixture from fridge and use a tablespoon to scrape mixture into the formation of balls

6. Roll the balls in the shredded coconut and place in freezer for 15 minutes


7. Enjoy!
