I dunno if you have time to prepare food the night before, but this one I like.. chop up some tofu into small rectangles, fry them up with a little olive oil, some balsamic vinegar, with some rice, ginger broccoli, any other green vegetables you like.. spinach? etc.. then you sprinkle a lil basil, even some lemon juice.. protein mostly from the tofu, healthy fats from tofu and olive oil, some carbs from rice, and plenty of phytonutrients.
simpler suggestion may just be some raw tofu and green beans with a slice of rye bread(I love rye bread) ....
or even a little whole wheat pasta with some tomato sauce in a tupperware container....
baked potato + something else?

Yep - elementary - 3rd grade. Makes eating hard, but not impossible. Plus, I'm on my feet ALL day!
