I like to bread my chicken like you guys mentioned above, and then bake it. Italian flavored bread crumbs, parm cheese, and pepper, soak the chicken in beat eggs and crumb em up.
Tonight I made em, but tried to pan fry 'em in slight bit of olive oil. The breading didn't hold too well. Next time I might try lite mayo- that works real well.
