What is it with rubber chicken breasts?

I love chicken breasts and eat them all the time. However at times I am unfortunate enough to go to a restaurant where you get what I can best describe as rubbery, shitty chicken breast. I can usually tell just by looking at the breast because of its texture and how it cuts. Does anyone else know what I'm talking about? They are not just rubbery but taste VERY salty and shitty in general. I think a lot of people don't even know the difference, mainly because most people don't eat a ton of chicken breast like us lifting folk do.

So I started thinking, what makes these chicken breasts this way? I'm sure its cost saving measure but was hoping someone who may have worked in a kitchen might know. Thanks for any info.
