From research I've read from H.I.T advocates Bryzki and Ken Mannie you may (just like you said) be doing far too many sets of triceps that it could in fact be counter productive. Maybe take a look at the concept of H.I.T training. This type of training really focuses on taking a muscle to true muscular failure in a small amount of sets. This approach has been said to be optimal for both size and strength gains. Also be sure that you are working the muscles antagonist partner. Meaning if your do 4 different bicep lifts in a session, be sure that you do 4 different triceps lifts as well to create a well balanced weight lifting routine that will lead to optimal size and strength.
