I personally see no reason why you CANNOT have the "mouth-feel" of the flavors you want, albeit a healthier version. Just as tasty - just as yummy - but without the TON of fat & calories as the restaurant versions.
And, ummmmmm, not to rain on your parade but here's a weird article on the Risks of eating eggs benedict. Who knew??
