It doesnt matter if something else is included in the dish (pasta for example), but it'd probably help us more if the recipes posted were reasonably healthy dishes or ones that focused on the chicken.

Take a chicken breast and butterfly it. Season with Lemon Pepper and add to hot fry pan with Spray or tsp of olive oil. Turn pan down to medium and move the breast over to make room for:

3-4 slices of fat free/low fat sliced ham/turkey, etc. Don't cook them for too long - you just want them a little bronw and hot.

Flip the chx breast over and layer one side of it with the sliced ham & about 1/4 cup cheese of your choice. (i use fat free or low fat. if you're bulking - use whatever you want)

Fold the other chx breast half over the first, turn the heat down to low, and cover until the cheese is melted.

Butterfly the breast (I do this because it takes less time to cook) cook same way as in #1, except use a larger sauce pan. When breast is done, remove it from pan and either shred it or cube it.

Throw the meat back into the pan and add a can of chicken broth. Also add:

green onions
mushrooms
celery
cabbage
or whatever vegis you like

season with a little soy sauce - not too much. While this is heating, beat together:

2 eggs or 4 eggwhites

When broth is starting to bubble, slowly drizzle in the egg. The egg will cook almost immediately. It's done!

I use chicken breasts to make a fajita salad. You can grill the chicken or cook it in a pan like I have for the other recipes. When the breast is done, slice it into strips and add to pan with

bell pepper & onion strips

Add a packet of chicken fajita seasoning to coat the chx & vegis. When you feel, they're done, remove them from the pan and add them to a plate of greens or baby spinach. Top with your favorite cheese & a little italian dressing.
 
Grilled chicken -- use any seasonings you wish....

Use on:
1) Fajitas with sauteed onions & peppers on flatbread or tortilla
2) Chicken omelette with eggs, veggies & leftover chicken
3) With brown rice, veggies & Green bottled Salsa

this is the shit:
put corn flakes, parmeasan cheese, and garlic salt in a freezer bag. pound with your fist untill the corn flakes are crushed up. take chx and dip in melted butter, then put in freezer bag full of mixture. roll around untill well coated. bake at 375 for 25 minutes. probably a little too much fat for some folks but it sure tastes good.
 
Chicken tacos.
Cut boneless skinless chicken breast into small pieces.
Cook in skillet until browned.
Add taco seasoning packet with water.
Simmer for 5 minutes.
Add meat to taco shell.
Quick and easy.
 
A favorite of mine is to get a pretty large chicken breast, slice a hole in it and open it like a cave.. put in chopped up bacon, one chopped up slice of ham, and mexican cheese. Cook for the usual time around 8 minutes 'george foreman', then cover it with '2 slices should do' that white cheese with the red spices in it. Put it in the microwave till cheese starts melting over the sides. Eat.

Maybe dipping in a whipped egg mix instead of butter and adding some butter substitute into to coating bag would reduce the fat while still giving you some butter flavor.

I like to take Vita-spelt angel hair pasta(available at Whole Foods), boil it, add Barrillo or Manischewitz marinara sauce (1/2 cup), a little shredded Mexican cheese, and a chopped, grilled chicken breast - mmm-MMM-goood!!!
 
I don't know if this is a "best" but this is what I do. (on a bulker).

Take some chix breast and cut into small strips (like the size of your thumb) put some flour (not much) in a plastic container, throw in the chix, put the top on and shake it up so it is lightly coated.

Put 1/2 stick of butter and 2 tblspoons of oil in a fry pan, throw in the flour coated chix, while cooking squeeze 1/2 fresh lemon on the chicken, season with salt and pepper.

I can eat pounds of it like this...you can dip in honey mustard if you like also.

Chicken Kabobs

Boneless ck breasts cut into 1" pieces
Tomatillos halved
Zucchini cut
Red onion in large chunks
Few tbsp. olive oil
Few tbsp. red wine vinegar
Handfull chopped mint
Handfull chopped parslet
2 cloves garlic minced
Few tbsp. crumbled feta
Couscous is you want

Arrange ck & veg on skewere and grill. Combine all other ingredients except for feta and couscous. Add s&p. Serve kabobs over couscous (or not) drizzle dressing over and add feta. It's so god damn good.

Season boneless ck breast w/ garlic powder & sear until lightly browned. Remove from pan, top w low-fat ricotta (tastes better than fat free & better consistency), two basil leaves, and low fat tomato sauce. Sprinkle with low-fat mozzarella if you want, bake at 350 for 20-25 min depending on how many you do.
 
OHH boy do I have a TASTY one for you guys.

Chicken with Cheese and Mushrooms

-Flatten chicken breasts, and dust them lightly with flour,salt and pepper.
-Saute breasts on each side in olive oil until lightly browned
-Saute muchrooms
-Remove chicken and add small amount of white wine to pan and bring it to a boil to remove alchohol. Simmer for 4 minutes.
-Put chicken back in pan. Top with slices of lowfat swiss cheese. Divide mushrooms on top of the chicken and cheese and spoon wine sauce over everything.
-Place the entire thing under the broiler for 3 minutes to heat again and melt the cheese. DONE

Low Fat, Low carbs, High protein, little salt due to natural MSG from mushrooms.

DELICIOUS!!!
 
I forgot one.

Curried chicken thighs in yogurt:

3-4 lbs. ck thighs skin & visible fat removed
1.5 c plain lo-fat yogurt
.5c lime juice
tbsp. lime zest
2 cloves garlic minced
1.5 tsp. curry powder (yellow or red)
2 tsp. paprika
2.5 tsp. ground ginger
tsp. ground corriander
1+ tsp. groung cayenne pepper
salt to taste

Combine ingredients in a bowl. Put ck thighs in a baking dish and cover with yogurt mixture. Cover and refrigerate overnight. Heat oven to 350 and cook covered for 45 min to 1 hr. Serve with what you will. Good shit.
 
Baked, grilled, steamed.

I like to marinate in either italian dressing, BBQ sauce, or with old bay on top.

I have a killer recipe for a deer steak marinate if anyone is interested. Never tried it with chicken.
 
Orange Skillet Chicken

1 Cup Orange Juice
2 tbsp Honey
2 tbsp Minced dried fruit
2 6oz Chicken Breasts
1 tsp Cinnamon
1/2 tsp Nutmeg
1/8 tsp Cracked black pepper
1 1/2 tsp cornstarch
1 tbsp water

Combine orange juice, honey and dried fruit in a large skillet. Cook over medium heat 2 minutes

Sprinkle chicken breasts with cinnamon, nutmeg and pepper. Place Chicken in skillet, cover and simmer 15 minutes. Remove chicken from pan; set aside.

Dissolve cornstarch in water and pour into the skillet. Bring back to a boil and let sauce thicken. Return chicken to skillet and let cook for a couple ore minutes.

Serve with Basmati Rice or Couscous.
 
This is the Best!

1) Get in car.
2) Drive on marked road to Kentucky Fried Chicken.
3) Pull into Drive Thru.
4) When the crazy lady on the speaker asks you what you want, tell her you want the "Dale Jr. Special".
5) Pull up to second window and hand the lady a $20.
6) She will then hand you a 5 gallon bucket full of half breasts and half legs with extra EXTRA crispy chicken.
*If you have a pickup or decent sized SUV it will be well utilized at this step of the *"recipe".*
7) Thank her and pull out of drive thru.
8) Proceed to drive home and park car is the usual spot.
9) Haul chicken bucket into house.
*Make sure to lift bucket with the back and not the legs. A 5 gallon bucket of chicken weighs a surprising amount of weight and should not be left to weak legs. A person who is used to eating at KFC will be "big boned" enough to lift this using your strong back*
10) Sit down with 2 rolls of papertowels and make sure the dog is put outside.
11) Grab a jug of milk and make sure it is whole milk, not that 2% crap.
12) Begin eating chicken until it is all gone.
13) When you have completed ingesting this "meal" proceed to the nearest writing surface with a pen and piece of paper.
14) Proceed to write your last will and testement because you will be dead within 15 minutes. :D

In West Florida, Church's Fried Chicken is worse, I think they even roll the mashed potatoes and gravy in flour and deep fry it.

At least keep the KFC bucket for the doc, so when they autopsy you they will have a large enough container for a heart the size of a 5lb canned ham.

I actually like churches and popeyes chicken but their biscuits are the BEST. Of course one of them has about 18 grams of fat BEFORE the jelly. LOL I allow myself one visit to each once a year. It's all my heart can handle.
 
Sear 1 large chicken breast in a pan....wrap with prosciutto & bake at 375 for about 20 mins....top with cheese....YUM!!

Excuse my ignorance.

Prosciutto is a type of ham from Italy, although other countries make it too. I get it in a vacuum package at Trader Joe's. They have it reasonably priced and it has a very nice flavor.

Prosciutto is also good with cheeses, crackers, bread, figs or wrapped around melon slices. :p

You could always use bacon instead in the backed chicken dish.
 
Take a bag of chicken breast like a 5lb bag from costco and marinade it in some lime juice,little olive oil and some Caribean jerk seasoning for about 3-4 hours,then take them and arrange them on the grill and cook them.Dont have to cook them all the way through if you want to freeze them and bag em in sets of 2 for a fast on the go meal later just take em and throw them in the microwave straight from the freezer after you have cooked them on the grill 3/4 of the way and they will still be nice and juicy.
 
Cut Boneless Chicken In Small Bite Size Chunks Marinate In Jamaican Jerk Sauce Stick On A Skewer Put A Cherry On One Side And A Pinapple Chunk On The Other About 5 Chunks A Skewer And Grill.you Cant Beat The Taste
 
I keep it simple here.... add an herb/garlic seasoning (tones is good), pour lemon juice over the breasts to tenderize it a little, spray grille with pam olive oil, then throw em on. After their done I pour warm low-carb marinara sauce over to taste.

low fat, low carbs, very low sodium :)

huh....I never thought about marinating the entire bag, lol. That's a great idea.

If you look on some of the bags, like from Winn-Dixie they have marinade recipes right on them.

* sauteed til well brown, add white wine, shallots, tarragon, mushrooms and tomatoes
*steamed with chinese black mushrooms, bamboo shoots, waterchestnuts, bok choy, ginger, garlic and chinese fermented black beans (sometimes i through in chinese dried red dates, wolfberries and ginseng but only when i feel really run down)
*well marinated in jamaican jerk spice with added scotch bonnets for more heat (ja mon i likey hot....grew up on the Island reminds me of more innocent times) lol and toss me a damn mango

Dice a half pound of chicken breast into 1/2-1 inch cubes
Marinate this for an hour in soy sauce, black pepper, rice wine (or sherry), salt, water and corn starch

Finally chop 3-5 green onions, mince 2 garlic cloves, and mince a tablespoon of ginger.

Put peanut oil in a skillet or wok. Fry up 15 red chilies until the chilies turn black or close to black. Add the chicken. After stirfrying the chicken for a little bit, add the garlic and the ginger. Then add a bit of diced red onion. Then the scallions.

Then add a sauce made of soy sauce, vinegar, sugar, corn starch, water, and sesame oil. Add just enough to coat the chicken and vegetables. Then add a handful of peanuts or cashews.

Serve with white rice.
 
My favorite is Chickon filets seasoned with Chef Pauls Poultry seasoning with a hint of cayane pepper seasoning. 4 ounces broiled at 375 for 20 minutes. Exelent
 
Chicken Marsala.

Pound chicken breasts
Dredge in Flour.
Saute in Olive oil.

Set aside.

Saute sliced crimini or regular mushrooms. A little bit of garlic
Add dry Marsala wine. Simmer down.
Add a tablespoon of butter and a little bit of flour to thicken.

Throw chicken in sauce and coat. Add basil.
 
Three cups chicken

Use 3/4-1 pound of chicken dark meat (thighs, legs) chopped up into two inch pieces with a cleaver.

Marinate the chicken pieces in soy sauce and corn starch for 30 min.

Fry the chicken in 1/4 cup sesame oil until brown on the outside.

Remove chicken, and add shredded ginger and chopped garlic to the oil. Saute for a little bit

Add chicken and add 1/2 cup of rice wine or dry sherry. Add another 1/2 cup of soy sauce. Add a teaspoon or two of brown sugar. Add minced chiles. Turn up to a boil and then simmer down for a little bit at low medium heat. Add a little bit of water. Sauce should turn thick.

Near the end of this braising add a generous amount basil or Kaffir lime leaves. This is important for the taste.
 
1) Chicken fajitas: soak breast or thighs in brine, tabasco sauce, and your choice of oil for at least 8 hrs. Then take out, wash off solution and panfry/grill/broil. Next cut into 1/2 inch wide slices, top with cilantro. Add salsa, cheese, etc if you want.

2) Low Fat Chicken Pho: dice chicken breasts into 1/2 sq inch pieces, throw into a pot of chicken broth. Add fish sauce, chili sauce, soy sauce, beef boullion powder to taste. Cook until boiling. Get some rice sticks, arrange in bowl and pour soup in. Let sit until rice sticks become soft. Serve with basil, mint, cilantro and lime.

3) Chicken Skewers: soak chicken in brine, vinegar, oil, herbs (thyme, rosemary, basil, cilantro) for at least 8 hrs. Dice chicken breasts/thighs into 1 inch sq pieces, skewer chicken and whatever vegetables you want, if any. Throw in a grill or oven. Serve with lemon, vinegar, and pepper dipping sauce.

Grilled chicken (salted) with two eggs, mixed in a salad and potatoes on the side. It's no french cuisine but I like it :)
 
Got new Caphalon pans for Christmas! :D

A recipe very low in calories to help shed those Christmas cookies.

If you have a good non-stick pan, no oil needed. Otherwise, brush the pan with olive oil or spray it.

Add:
Some chopped onion
Garlic
red bell pepper
Chx breast, cubed

cook it up some, and add:

sliced mushrooms
shredded cabbage

cook only a few minutes (you want the cabbage to stay a little crunchy) and add:

as much fat free low sodium chx broth as you want to make a soup. Lightly season and enjoy.

Not a culinary masterpiece, but it's hot and fills you up, plus gives you lots of fiber.
 
poach a chicken breast in chicken broth, lime juice and white pepper
let cool and chop fine
mix with lime juice, fish sauce and chopped thai chilis
mix with sliced red onions and red peppers, mint, cilantro and basil
serve on lettuce
 
chicken tikka

dice up some chicken breasts
brown in some olive oil
add some salsa, chopped onion & peppers,curry powder and chicken broth
cook till chicken is cooked through
finish with a bit of cream or coconut milk and chopped cilantro
can jazz it up with some chopped chilis

For the record I've been doing this, and it's been fuckin' awesome.

I have no excuse to not eat a chick breast when I open the fridge.

Bag of chix at walmart = $8, bottle of low cal marinade = $2. So worth it.
Food for a week.

well this is not exactly low cal, but here is my recipe for oven fried chicken . its easy and always good.

ingredients: chicken pieces, 1 or 2 beaten eggs, quarter cup milk, seasoning salt, flour, corn meal. preheat oven to 400.

--cover baking sheet with foil, spray it with cooking spray (Pam)
--beat eggs in small bowl with milk with fork
--in plastic bag, mix about 3/4 cup flour and 3/4 cup corn meal with seasoning salt to taste. for lots of flavor dont skimp on seasoning salt.
--dip chicken pieces in egg/milk mixture them put in plastic bag of flour mixture and shake till well coated
--place coated chicken on baking sheet skin side up and bake for 35 minutes.

well
now that i've dug my bbq out from under all the freaking snow we received this year
while i was waiting for the coals to get ready for my jamaican jerk pork loin i noticed i had bunch of legs left over from another meal
so
i grabbed a wack of foil (5-6 feet long)
sprayed with olive oil spray
toss on the legs
some sliced onions and peppers
italian herbs, whole cloves of garlic
touch of soy sauce
some lemon slices and tons of black pepper
wrap it all up double sealing the edges then doing it again
and tossing it directly over the hot coals
cook about an hour and eat up
 
for a variation of the above recipe

use red onions, tomatillos (opt), tomatoes and green peppers
add some jalapeno, chili powder, cumin and pinch of cinnamon and cloves
lil fresh cilantro
some lime slices and soy
don't forget the black pepper and garlic
