Marinate them, go to the grocery store and grab some sort of sauce (Teriyaki, BBQ, Honey Garlic) just make sure the sauce isn’t ridiculously bad for you. Then toss em on a grill (I use a George Foreman… ) This is quick and easy, some rice and veggies on the side if ya got time.
With that same sauce (I use non-fat ranch) slap a couple of breasts in the oven with the sauce on top and let them rip. If you want veggies just throw them in the oven with the chicken to get a one shot meal.
Another thing that I do is buy whole chickens take the skin off an throw one in the oven and boil the shit out of the other. I debone the boiled chicken and throw in some rice, veggies and eggs and make a think ass soup that I eat pretty much all day should last for about 2-3 days. The one in the oven in used 1/2 for lunch for 2 days. But this way it take alot more time.
yet another way to do it is to buy some teriaki sauce and make the chicken chineese style to change things up. Only problem with this is the sodium but.... if you are looking at the chicken your eating and wanting to puke it is a good idea to change it up a bit!
I like to marinate it in some Mesquite marinade.....the brand I use is McCormick.....try it out....it's some good shit. They also have South west, zesty herb, and carribean spice marinade's. but I'd stick with the mesquite.
