Aside from eating clean and getting the water you need, what magnitudes of veggies and such should be eaten to obtain adequate vitamin and mineral absorption?

Assuming you eat a fairly balanced diet;
Protein: Red Meat, Tuna, Chicken
Fats: EV Olive Oil, Flax Oil/Ground-Up Flax Seeds, Mayo (some sat fats ain't bad and real mayo won't kill you), Almonds/Peanuts
Carbs: Oatmeal, Potatoes, Yams, Bastami Rice (supposedly one of the healthiest rices...), and Whole Wheat Breads...

What would you need to have to finish off your nutrition?

Juve or BBF here? I know you two have a wealth of info, and I'm not sure what vits or mins are missing from the above food list, and which are important that I really need.

I know BBF suggested a pound of lettuce a day to make up for some lost nutrition, but I'm wondering if that would really cover it. Seems to just have a lot of vitamin A, not much else.
 
Well, I always make sure I have enuf calcium daily, 25-35g of fiber per day.....

I also try to eat a variety of veggies based on the seasons....going by what's cheap or on sale.......I also found a really nice & inexpensive produce place so I can get a variety of veggies -- peppers, squashes, eggplants, lettuces, fresh herbs, etc......keeps it interesting & healthy...
 
A multivit + multi minerals always help your diet
 
i think canola oil is lower in fats than olive oil. but if you want it for fats then go olive.
