On calorieking.com, a pork shoulder, lean & fat, roasted has 83 calories per ounce and 6.6 grams of protein. The same thing raw has 67 calories and 4.9 grams of protein.
 
There is more water in raw meat than in cooked meat
 
maybe you can absorb it better, hence there is more protein? I don't know why more water would matter...bump.
 
If raw has more water, then 4oz of raw pork shoulder are different than 4oz of cooked pork shoulder.

What I think that means is by when you cook it, the meat may shrink, so the nutrients become more concentrated. It makes sense in my head, not sure if I'm explaining it right though. Basically when it is raw, you have a certain amount of nutrients but in a bigger package, when you cook it, you still have the same aount of nutrients but the physical matter is less. That's just my idea, could be completely wrong.
 
100g raw meat = 40g water + 60g P/F/C
(random figures)

100g cooked meat = 20g water + 80g P/F/C

=> more P/F/C
=> more protein
=> more calories

Right. What I was getting at though is 100g of raw meat will not yield 100g of cooked meat. I didn't take that into account before.
