another routine? volume?

want to stick with a basic mass building routine.two exercise per group,once a week.example,flat bench,and incline bench 4x8 ramping up in weight with small increses(5lbs each set).My other thought was a 5x5 flat followed by 3x8 incline.Looking for some size over the winter,is either one better than the other,or even enough volume?maybe hit each muscle twice a week? my stats are,5,8 190lbs,39yrs,been training off and on for a few years now.
 
rest of routine,Tuesday- rows and deads, Wednesday off.Thursday,shoulder press,side raises(or something better?) Friday squats and arms.for arms looking to superset skull crushers with ez curls.Weekends off
 
Hey bro google Strong Lifts 5x5. You wont find a better program for adding strength and mass! If you do it, do it exactly like it is written and feed the program. You have to eat to make it work!
