Looking for new ways of eating meals on the go and especially in the car as my job has me driving about 200 miles a day (literally) Ive come up with a great recipe.

First off I batch cook everything. Chicken, rice, veggies so I have them handy. While I have the grill going to do chicken I also have a basket to grill veggies...I throw in onion, peppers, squash and brocolli and cook it all at the same time. You can add what you like.

So when I need I take 5 egg whites and one whole egg and scramble in a bowl. I take a chicken breast and chop it into cubes, dice the veggies and throw them into a skillet with a bit of evoo. Add to that a half cup or more of brown rice and heat up for two minutes tossing so it doesnt burn or stick. Once warmed add in the scrambled eggs and cook till done. Its actually really great cold too, the flavor of the grilled veggies bring it all together. Huge protien and good carbs...Could also make it into a sandwich with a bit of ketchup.

something i would do
but i would not spoil it with catsup
but a good dollop of hot sauce is always in order

Hot sauce mixed IN ketchup is good too!! :p
