best way to cook them is to cut them into cubes, shake in a ziplock bag with montreal steak spice, cayenne pepper and some oil, back at 350-375 until browning.....eat and enjoy
Another way I had them last night was to bake the whole yam in the oven for an hour and 15 minutes on a cookie sheet, and when done there is a caramelized coating from the natural sugar that leaches out of the yam that gives it a nice sweet taste...eat the whole thing skin and all!!!
