I'm only about 5'7" max, so it's quite easy for me to do deep squats. I only started doing them about 2 months ago though. I used to just go to parallel and I got great quad development from that. I definitely feel more in my hams and glutes when I go ass to soleus. My legs respond either way, but my quads were overshadowing my hams before.
