I shrink if I eat less protein..gain fat% if I eat more carbs..sound right?

Gonna depend on your activity level. If you cut back on your protein levels but maintain the same activity level probably expect some muscle mass to be lost. That's sort of part of my goal. "Shrink".
Right now I'm in between everything - no idea my work schedule, how busy, travel, etc. I have little or no appetite, I can't lift much of anything because I want to give all my joints, etc a little time off cuz something always gets strained if I do anything --- so just cardio. No idea what I will change up. Just right now - no appetite, cardio only, don't really give a shit about 'building muscle' and I have plenty already. If cut everything back proportionally food-wise but keep the activity level going, you can lose some size - fat & muscle.
