I've made protein pancakes in the past using protein powder, egg whites, oatmeal, splenda & cinnamon & they were soooo thin they were more like crepes than pancakes. Not fluffy or thick at all.

Is this normal? If so, how can I fluff them? Add baking soda or real pancake mix?

fudge fluffing them I wanna know how you made those ingrediants like crepes!

When I put all the ingredients in a blender & blended it, it was very very thin so when I put it in a hot pan, they didn't fluff up like pancakes do. But when one side was cooked you just turn it over & cook the other. I figured they'd be good rolled up around some type of filling.

Jen,

Add some 1% salt free cottage cheese or fat free ricotta cheese. This will do the trick and also add some extra protein.

Here was the recipe I used:

6 egg whites, 2 whole eggs, 1 cup quick oats, 1 tblsp cinnamon, splenda
Combine in blender & cook like panckakes.

Except they were so darn thin, they weren't like pancakes at all. Next time I'll try adding the cottage cheese.
