Cooking with fats

Ok, this is probably a stupid question, but whatever...

When trying to get more EFAs into a diet, is it a good idea to stir fry chicken in some olive oil instead of grilling it? Or does frying it ruin the chicken and/or spoil the fats?

Reason I ask is that most BBing diets I see have grilled chicken breast, and a seperate tbsp of flax. Is it just as effective to cook the meat in the fat? Or does the fat turn hydrogenated or something if you do that?

Also, suppose I used 10ml of olive oil to cook the chicken in. Do I count the entire 10ml as fats, or does some get evaporated while frying?

Flax oil is not a good oil to cook with, it's only for fresh purposes such as in a shake or on a salad.

Olive oil has a low smoke point, which means it will burn or start to smoke at a lower temperature than other oils which may have a higher smoke point. I have not seen anything so far where heating olive oil turns it into a trans fat.
