With Autumn coming around the corner I was wondering if anyone has really good spin off recipes for typical winter comfort foods..... chili, spaghetti, mashed potatoes....etc.
I DO know that one and have no tried it yet but ABSOLUTELY plan to, though I've never seen an actual recipe before... would like to! I even heard of adding food coloring to get your kids to eat it too
Pumpkin Pancakes! Awesome for fall mornings.
.25C Hodgson Mill Buckwheat Pancake Mix (Maple Groves Farms Sugar Free Mix is great too, or you can use plain rolled oats as well)
.25C canned pure pumpkin (not the ready-made pie filling, just pure pumpkin)
2 egg whites
1 tsp cinnamon
1/4 or 1/2 tsp pumpkin pie spice (depends on how much pumpkin you want to come through in the pancakes)
2 packets splenda
I add water until I get the consistency I want, skim or soy milk works well too
Mix in a bowl and cook just like pancakes. To up the protein, sometimes I add in BSNs lean dessert in Cinnamon Bun.. its heaven. Imagine a Pumpkin Spice Cinnamon Bun.
