Chicken Salad Pita

You will need pre-cooked chilled chicken..I like using the night before's leftovers. Slice the cold chicken and mix with enough mayo to make it not dry. I like to also add nearly shaved celery and a little bell's turkey seasoning powder. paprika or nature's seasoning also taste good for a sprinkle of flavor.
chop chicken, add mayo, add celery and seasonings, scoop out onto pita covered with lettuce.

its hot where I am, so I personally really like the hydration of the whole thing..the lettuce is really crisp and full of moisture. yep, its super easy to make~
 
Sounds really good. I love getting recipe's like this from members. My addition? I'd Change the mayo to the kind with olive oil in it. Gonna make one as soon as u get back in town next week!

I like cooking nearly everything I eat. I rarely eat out and I like it that way. It seems when a restaurant or sandwich store makes your food, they always skimp out on the quality ingredients, throw in some fatty crap you dont need or want. Atleast this way, you can control the chicken..no greasy chicken for me... and you can add mayo or light dressing as you want. I like to add way more chicken than any store would ever sell in one sandwich. maximize the meat, minimize the bun.

I just don't like most things on a regular Canadian/American style menu.
However, if I go to a Vietnamese, Sri Lankan,Indian, or Thai (some items are OK) restaurant I am pretty much good to go- I like most of that food.
I like food that is light, clean, not greasy, spicy, and full of flavour.
 
Suggestion; drop the mayo and substitute for brown mustard! I've been making 12-16oz things of chicken salad with brown mustard, cracked pepper, sweet relish, chopped onions and sunflower seeds(also sometimes add in dried cranberries) and it's awesome. Add it in a pita with lettuce or maybe shredded cabbage and it you got a winner!
 
yeah that sounds good. I love spicy brown mustard too. I'd be interested in learning some indian and non-american recipes..get posting trex.
