Hey ducky babe!!! :D Yeah, I should be able to post more now that my life is a little more settled and regulated, thank goodness. Even just having my laptop out and on all the time makes it so much easier for me to sit down and catch up with everyone.

Speaking of which, I promise promise promise I will get to reading the logs tonight or tomorrow... I really want to see how YOU all are doing too! Don't think I've forgotten!!!

Recipe for Pastitsio
Makes 8 servings; use a 13x9x2 or a 7x11 glass baking dish to make this.
From WWers "Take-Out Tonight" Cookbook. I modifed a couple things; Nutrition listed is for my version.
Ingredients
3 cups 2% milk
1/4 c. cornstarch
3 large eggs, lightly beaten
8 tablespoons grated parmesan cheese (or red. fat)
3/4 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg, ground
1/2 pound spaghetti (or whole wheat will do)
1 T EVOO
1 onion, chopped
1 lb lean ground sirloin (you could use ground chicken or turkey, but my nutritional facts are for sirloin, FYI)
1 pound plum tomatoes, chopped (about 2 cups)
2 garlic cloves, chopped (I use the jarred garlic, pre-minced)
1/4 tsp cinnamon

Instructions
1) Preheat oven to 350 degrees. Spray baking dish with nonstick spray; set aside.
2) To make the white sauce, combine the milk, cornstarch, and eggs in large saucepan. Cook over low heat, stirring constantly until thickened, 7-9 minutes. Remove from the heat and stir in 6 tablespoons of Parmesan cheese, 1/4 tsp salt, 1/4 tsp of pepper, and the nutmeg; cover and set aside.
3) To save time, do this before step 2 Bring a large pot of lightly salted water to a boil. Add spaghetti and cook according to package directions. Drain and set aside.
4) To make the filling, heat a large nonstick skillet over medium-high heat. Swirl in the oil, then add the onion. Cook, stirring occassionally, until the onion is softened, 4-6 minutes. Add the sirloin and cook, breaking up the meat with a wooden spoon, until browned 5-6 minutes. Stir in the tomatoes, garlic, cinnamon, and the remaining 1/2 tsp salt and 1/8 tsp pepper. Cook, stirring often, until liquid from tomatoes evaporates I actually take a bit off the top of the tomatos and squeeze some of the juice into the sink before chopping them to reduce the amount of moisture I'm "waiting" to evaporate.
5) Arrange half the cooked noodles in an even layer on the bottom of the baking pan. Top with the filling (all of it), then top with remaining spaghetti. Spread the white sauce evenly over the spaghetti. Sprinkle sauce with remaining 2 T of cheese. Bake until top is golden, 30-35 minutes. Cut and cool at least 5 minutes before serving.

1/8 of pan = 1 serving
375 calories, 14 g fat, 5 g sat. fat, 0 g trans, 138 mg cholesterol, 220 mg sodium, 0 mg potassium, 35 g carbs, 2 g fiber, 26 g protein

Works for me! Wasn't sure to put it here or there -- or both!!! I guess I can managed to share the wealth and good eatin'!

Tonight I'm making Chicken and Vegetables en Papillote (chicken and veggies in foil pockets, basically). I'll let y'all know how it turns out. :D

OMG, it's only been 3 days so far walking outside in this sun and can we say MEGA TAN LINES?!?!

I bought some strapless tube top shirts today for myself. Um -- shocked that I looked good in them... yowza! But it'll take care of those darn sports bra lines on my back, I hope!!! :mad: :D :qt:

Oh yes, got years of experience of those wonderful tan lines from living in TX myself :) You get used to them... or ya help them go away (ie tube tops, bathing suits, etc) Just glad to hear you are enjoying it :rose:

Now I just need to go buy a strapless bra to wear seeing that my old one got tossed due to loss of da' gurls. *sigh* :p Oh well; I'd rather have big muscles. :) Wahoo! :arty: BBL.
 
T-Cake's MEGAWednesday
Ok, so it's not that MEGA... but it's something. :D

Cardio and Weightlifting
* 60 min. walk outside first thing on an empty stomach this morning.
* No lifting today -- didn't feel last night's lower body lift until about 9pm tonight... it's gonna be FUN tomorrow!

Props to myself: :rose: I was feeling hella sick during my walk this morning -- first I had my kinks in my knees and legs as usual... then I suddenly just got really sick to my stomach like I was going to throw up... then I felt lightheaded... then it changed to these little zinging pains in various places (arm, chest, etc.) Thank goodness Ulter was with me -- he concluded I was probably just really really hungry, and I just changed up my pace and said we'd stop early. WELL -- I didn't stop early -- I finished like a pro. Just goes to show that perseverance CAN work... just need to listen to the body, I guess.

(8 oz chicken breast and 1.5 cups of snow pea/red pepper/shallots mixture)
1/2 pint blueberries

2 T ANPB
3 scoops ISO-AGB in 1 L Crystal Light (throughout the evening, while cooking, etc.)

TOTALS
1550 calories
48% p / 22% c / 30% f

I think I'll go catch up on some logs now... :D :twirl:
 
T-cake, have you had any increase in appetite with the var? YOur macros look really good. And yes props to ya for perservering! Takes alot to work thru a sick feeling.
