It is fantastic you are looking at your diet, however, some of the substitutes are worse than the 'real thing'.
I wouldn't use coffee mate, it is full of artificial fats, which are known to affect the cellular membranes, which can lead to insulin sensitivity.
If you are on a low carb diet, full fat cream or half and half is better, or use 2-4% fat milk (is that semi-skimmed in the US?)
I use artificial sweetners as well, I would recommend Stevia or Splenda over any of the aspartame or saccharin sweetners.
Salt has also been given a bad rep as well.
Too much bad quality salt, which is present in a lot of processed foods is something you really want to limit (Pizza hut meat feast has something like 9 g per slice or something ridiculous like that), but good QUALITY salt is essential, it has anabolic properties, and the sodium-ATPase pump is what helps to drive nutrients into your cells.
REAL salt is not pure white, it often has a yellowish or pinkish tint to it. I would recommend rock or sea salts, or a good macrobiotic quality 'soya' sauce such as tamari or shoyu, and other 'salt' products such as miso and umeboshi plum paste.
