These tortillas I get from Trader Joe's so they are Whole Wheat & only 6 carbs with 2g of fiber so they are small.....I made them like a soft taco & the chicken was just pre-cooked chicken I had in the fridge that I just picked into little pieces.....
They just sound so delicious! Have you tried chilaquiles?

11:00am - Had an appt. at this local tech-type school to check into their Medical Biller program.....figured this is something I could do at home & take with me anywhere.....BUT - the class is 7 mos long, 4 days/nights a week and $8,000!!!! :worried: :worried: Holee Molee!! That's a lot of time + money.....so not sure what I want to do there.....

Ok...It's a very traditional breakfast in west central Mexico kind of the region I am from....Actually it is a city dish from Guadalajara.
It consists of tortillas cut into small squares about 1/2 inch and they are fried...of course you can do like i do...in SKILLET heat distributes better and less oil is needed...
So you put PAM on skillet once it is hot add the tortilla pieces until they are golden brown, crunchy...
You have prepared the salsa beforehand, and add it to the tortilla squares, and quickly serve or they will get soggy, garnish with shredded cheese, it is best if it is a crumbly cheese, not a melting type of cheese, add chopped onions and if you like and diet permits...LOL add sour cream.
Yummy!

I like the salsa with 4 serrano chiles per red tomato.
You grill both tomato and chiles on skillet and once they are cooked and cold, peel skin off, blend with sea salt and not too much water, not too pasty.

I hope you like it and I love them with cooked in only water beans..if you kind find peruano beans they are light creamy yellow, and cook them till they almost come apart, then add the salt...
Gotta go gym is calling VOLTA VOLTA... :qt:
