I read that in pre refridgeration times chicken soup and other foods including beer (gruel) developed antibiotic properties as they went bad. This is where the very old idea comes from however I think needto's logic makes more sense for modern day chicken soup.

To make the chicken grow they inject them with anabolic substances, chicken sent to the slaugher house, then to the supermarket, then you eat you feel good and grow...
