best cow organ to eat for protein and nutrition with low fat

I would like to run a diet on low carbs, veggies, chicken, fish and instead of regular steak I will be having organs, heart, kidneys, liver etc...what do you think of this guys? and what would the best organ to have for nutritional benefits and the heathiest one in your opinion, not too fatty thank you!
 
Beef heart, people don't eat it because they're pussies. It's actually delicious barbecued, don't bother cooking it any other way because it has a different texture than what you're used to.

Liver is also excellent, think it has a little more fat but it's actually good for your liver too.
 
I am a HUGE fan of liver. Gram per gram, liver is the most nutrient dense food on earth. It is truly a super food. It is also extremely lean and contains more protein and less fat then steak or ground beef.

The only thing about liver is that it is the organ that detoxifies toxins from your body. Because of that, you only want to eat the liver of a health animal. I would not feed liver from a regular grocery store to my worst enemy. Make sure to buy liver from a properly raised cow that was fed a diet of 100% grass.
