- Many enzymes (such as carbonic anhydrase and lactate dehydrogenase) that prevent the buildup of lactic acid in muscles (a major cause of sports fatigue) require zinc for their action. Because many fitness-conscious people have reduced their intake of animal products, they may not be getting enough zinc, (vegetables and plant foods are lesser sources of zinc than animal foods).
